World-Class, USDA Steakhouse
The Restaurant at the White Buffalo Club is one of only very few eateries in Jackson Hole offering USDA prime steaks. But while the smaller, boutique restaurant is known for its steak, Executive Chef and Jackson Hole native Joel Hammond says, “Our specialty is good food.”
Very popular with diners is the restaurant’s Carte Blanche menu option that is the chef’s guided dining experience for the whole table. It consists of five courses with wine pairing. Hammond is a very inventive chef. He describes his culinary creations at the 42-seat restaurant as “French food, but with a lot of Japanese ingredients.”
The entrees are very seasonal, featuring the best ingredients available. Chef Hammond tries to use as much locally sourced food as possible. He has a great relationship with the valley’s cattle ranchers and farmers and this translates into offering Jackson Hole visitors what they want when they come here: incredible meat year- round and wild game in the summer.

The restaurant’s menu rotates constantly.
“I simplify the menu in summer quite a bit so it’s very familiar for a lot of people who come to Jackson Hole,” the chef says. “We have a lot of wild game and fish as visitors also want food that’s from here. In winter I branch out more and cook more seafood.”
Examples of entrees include bison short rib, bouillabaisse with artic char, octopus, mussels and smoked tomatodashi among other ingredients, as well as market fish. Hammond says he butchers the restaurant’s own steaks and grinds all burgers on-site. He also boasts that everything is homemade, from the catsup and butter to bread, spices, cheeses and more.
“There’s a story behind every ingredient,” Hammond says.
In addition to the intimate dining room, customers can request and enjoy private dining on the third floor terrace, a delightful space with views of the surrounding buttes. Music is also part of the ambiance up on the terrace. Another option for private dining is in a cozy, wood paneled room off the lounge which doubles as a yoga class space during the day.
The lounge features a fireplace and big screen TV and has a double happy hour: 5 to 6 p.m. and 9 p.m. to close. There is a special lounge/bar food menu that includes items such as steak frites (USDA prime tenderloin), mini hot dogs and roasted bone marrow, among other mouth-watering and tummy-satisfying gastronomical options. Creative cocktails are offered in the lounge and the restaurant, as well as an extensive selection of fine wines.
All in all, the White Buffalo presents its guests with the best of both worlds, especially during ski season. You can stay where all the action is in town, but still have easy access to Jackson Hole Mountain Resort via the courtesy shuttles to and from the hotel.
